This movement creates shear zones where particles or droplets are broken down into extremely small, consistent sizes—typically ranging from a few micrometers to nanometers.
The key difference lies in the intensity and precision of mixing: standard emulsifiers may produce uneven particle sizes (leading to unstable products that separate over time), while high-shear homogenizers ensure tight particle size distribution, resulting in longer-lasting, higher-quality emulsions. Additionally, high-shear models often operate at much higher speeds (1,000–15,000 RPM) and can handle more viscous materials than basic emulsifiers.
